The menu was unsurprisingly fresh and fabulous, packed with health and happiness, but one of our favourite things, and one we will most definitely be trying at home, was the Chilled Strawberry & Coconut Cream Soup.
Jordan was kind enough to let us in on the brilliantly simple recipe…
Chilled Strawberry & Coconut Cream Soup
1 punnet washed and hulled strawberries
2 cups good quality coconut cream
1 teaspoon vanilla extract (preferably with seeds)
In a blender, combine all the ingredients. You can add more coconut cream or strawberries depending how sweet you want it, or how pink you want the colour to be!
Pour into shot glasses and chill for an hour.
