This dressing is absolute heaven. You’ll want to pour it on everything.

Honey-Roasted Carrot, Miso & Ginger Dressing
2 medium or one large carrot/s
2 Tbsp miso paste – potentially less if you’re using a dark miso or more if using white miso
1/4 cup oil – I use a mild olive oil but any neutral oil will work
juice of one juicy lemon
2 tsp honey – one for roasting and one for blending with dressing (may not need all the honey if you use white miso)
1 tsp sesame oil
1 tsp finely grated ginger (more if you like)
1/2 – 3/4 cup water
Prepare this dressing in a blender or use a hand held blender. I use my handheld blender as it’s pretty grunty and makes the dressing lovely and smooth.
Peel and roughly chop carrots. Drizzle with oil and 1 tsp of honey. Roast until golden and tender.
Blend all ingredients until smooth and creamy. Start with 1/2 a cup of water and add more slowly till you get a thick but pourable texture. The dressing will thicken more once chilled so you may need to add a little water before serving to get a good pouring consistency.
