You don’t need any fancy equipment to make these dehydrated lemon slices, the oven works fine.
Wash lemons throughly (organic would be ideal as the skin goes into food).
Slice into half centimetre rounds and place on an oven tray covered with baking paper.
Pop into the oven on the lowest heat possible, and dehydrate. After three hours check progress, flip the slices and continue for another hour or until they are dry to the touch. These should last for ages stored in an air tight container.
Use as a garnish in drinks (gin and tonic is ideal), added to salads, or could be candied with honey to decorate some baking.
